Chilli & Cheese Toast with Spiced Scrambled Eggs 

Chilli and Cheese Toast and Spiced Scrambled Eggs are the perfect indulgent treat for a lazy brunch. The Chilli and Cheese toast is inspired by one I ate at a restaurant that I fell in love with and have tried to replicate it at home. Here are my recipes for both.

Serves 2

Chilli & Cheese Toast


  • 4 slices bread, toasted
  • Gouda cheese, grated (you can use any other cheese too but Gouda goes so well with it in my opinion)
  • 2 green chillies finely chopped
  • 1 tablespoon grated ginger
  • 1 teaspoon smoked sea salt
  • 1 teaspoon crushed black pepper
  • 1 teaspoon cumin powder
  • 2 tablespoons melted butter


  1. Pre-heat the oven to 200 degrees celsius
  2. In a bowl mix the melted butter, ginger, green chillies, sea salt, black pepper and cumin powder.
  3. Spread this mixture over each toast generously.
  4. Scatter the grated gouda cheese over each toast and place on a baking tray lined with foil.
  5. Bake for 15 minutes until the cheese has melted.


Spiced Scrambled Eggs


  • 4 eggs, beaten
  • 1 teaspoon cumin seeds
  • 1 red onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 tablespoon fresh ginger, grated
  • 1 beef tomato, chopped
  • 1 green chilli, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon salt
  • 1 teaspoon crushed black pepper
  • Handful chopped coriander to garnish
  • 2 tablespoons oil


  1. In a frying pan, heat the oil on medium heat.
  2. Add the cumin seeds and let them sizzle for 2 minutes.
  3. Now add the chopped onions and green chillies and let these cook for 3 minutes before adding the garlic and ginger.
  4. Add the chopped tomatoes and all the spices and mix well.
  5. After 3 minutes pour in the beaten egg mixture and keep stirring for 5 minutes until scrambled well.
  6. Garnish with the chopped coriander and serve hot with the Chilli Cheese Toast.

    This looks so good! I have all of the ingredients except for garam masala and the bread, so may pick these up and give it a go 🙂 well done!
