Rocket, Basil and Thyme Pesto


 Perfect as a dip, a sauce for pasta or a spread in sandwiches and pizza….pesto tastes delicious and is really quick and easy to make.

My version uses rocket, basil and thyme for extra herby yumminess.


  • Rocket leaves – approximately 3 handfuls
  • Basil – approcimately 2 handfuls
  • Thyme – 6 sprigs
  • A handful of pine nuts
  • 2 handfuls of grated parmesan cheese
  • Good quality olive oil – 3/4 cup
  • Half a teaspoon of salt
  • Half a teaspoon of pepper
  • One garlic clove chopped 


Put all the ingredients in a blender or food processor and give it a good blitz. Now you have some delightful pesto 🙂 

Tip: Store any extra pesto in an airtight container and pop it in the fridge. It will last at least 5 days in the fridge 🙂
