Aubergine Pizzas


 Love Aubergines/Egg plant and Pizza? Why not make a healthy hybrid of the two with my recipe.


  • 2 large Aubergines, sliced lengthways
  • Pasta sauce
  • 1/2 cup grated cheese
  • 1 red chilli, sliced
  • 1 spring onion, sliced
  • 4 cherry tomatoes, sliced
  • A few sprigs of thyme
  • Tabasco


  1. Preheat the oven to 200 degrees celsius.
  2. On a foil lined baking tray, place the sliced aubergines and drizzle oil on them generously.  
  3. Bake for 10 minutes and then flip over for a further 5 minutes.
  4. Remove from the oven.
  5. Spread pasta sauce over each slice.
  6. Add the grated cheese on top.
  7. Garnish with the chillies, spring onions, thyme, cherry tomatoes and a few drops of tabasco.  
  8. Bake for a further 5 minutes.
  9. Eat hot!
