Stuffed Green Chillies

Perfect as a starter or a side, stuffed green chillies are so delicious and addictive to eat!

  Ingredients:

Stuffing:

  • 6 mild/ medium green chillies
  • A potato boiled and mashed
  • One small red onion chopped
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon salt (add more to taste if you need to)
  • 1 teaspoon crushed garlic
  • 1 teaspoon ginger
  • 2 tablespoons oil

Batter:

  • 100 grams of besan flour (gram flour)
  • 150ml water (room temperature)
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon ajwain (carom seeds)
  • 1 teaspoon amchur (dry mango) powder
  • 1/2 teaspoon red chilli powder
  • 1/4 teaspoon salt
  • Oil for frying

Method:

  1. In a pan heat the oil on medium heat and add the cumin seeds.
  2. When they start to sizzle, add the onion and cook for around 5 minutes.
  3. Add the garlic and ginger and cook for a further minute.
  4. Now add the mashed potato and spices.
  5. Cook this, stirring regularly, for 3 minutes and then take off heat.  
  6. Now mix all the ingredients for the batter.
  7. Cut a slit in each green chilli and deseed. Try and not cut it all the way till the end of the chilli so you have a “pocket” but don’t worry if some open up.
  8. Stuff each chilli with the potato mixture.  
  9. Heat the oil in a Karai or deep fryer.
  10. Dip each green chilli in the batter and once oil is hot fry them until they are golden brown.    
  11. Place each one on a piece of kitchen roll to drain the oil.
  12. Enjoy while hot!
