Okra are such a wonderful vegetable. Not only are they healthy, they are so versatile and truly make a dish taste wonderful. They have a lovely shape, which makes them easy to stuff with delicious flavours.
Here is my recipe for okras stuffed with spiced sesame, coconut and peanuts. You can eat this as a starter or a light lunch or dinner.
Ingredients:
For the Okra:
- Okra (around 10)
- 1 teaspoon salt
- 2 tablespoons coconut oil
For the stuffing:
- 2 tablespoons coconut oil, warmed slightly
- 1 tablespoon lemon juice
- handful chopped coriander
- 6 peanuts (I used skinned ones)
- 1 and 1/2 teaspoons desiccated coconut
- 1 and 1/2 teaspoons sesame seeds
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon salt
- 1 green chilli, chopped
- 1 tablespoon grated ginger
- 2 garlic cloves, crushed
- 1 teaspoon sugar
Method:
- Wash the okra in a colander and sprinkle salt and leave aside for a few minutes.

- Now put all the stuffing ingredients into a food processor and blitz well.

- Cut slits in the middle of each okra so it widens out like a pocket.
- Fill each okra with the stuffing mixture.
- In a pan, heat the coconut oil on medium heat.
- Arrange the okras on the pan in batches and fry till slightly browned.
- Enjoy hot!
