Ready Steady Lunch: The ingredient challenge

What happens when two friends brainstorm on Twitter? A fantastic idea is born. Let me introduce you to #ReadySteadyLunch a concept whereby each week my fellow friend and blogger Michelle, AKA Petite Tea Lover  and I will inspire and challenge each other to make a packed lunch to take into the office.


This weeks challenge was all about ingredients. We gave each other a list of ingredients to assemble a lunch. Michelle gave me a key ingredient of Figs, followed by goats cheese. walnuts, balsamic vinegar, lemon and salad of my choice. I could then add to them if I wanted. I gave her feta cheese as a key ingredient which was something she had’t tried before.

So what did I do with those ingredients?

  I decided to make a mixed salad which comprised of:

  • Figs
  • Walnuts
  • Goats cheese
  • Apple
  • Spring onions
  • Cucumber
  • Pieces of Warburtons sandwich thins
  • Balsamic vinegar

  This was a combination that I could eat cold so I poured the balsamic vinegar in a little container (Amit’s unused contact lens solution bottle to be precise as couldn’t find a small enough bottle).

I simply chopped up the ingredients and filled my lunchbox with them. I didn’t drizzle the balsamic vinegar on at this point. When I was ready to eat my lunch I added it then to avoid everything getting all soggy.

  My main driver for making lunch at least once a week (am going to aim for more) is to save money. I am going to transfer the amount I would normally have spent on food at work for each day that I bring my own lunch in to my savings account (I even have a reminder in my calendar for it). That way at the end of the year I can splurge on something guilt free.

I spend a whopping 7 pounds a day on lunch, a soft drink and crisps/chocolate. This equates to a scary figure which I won’t shock you all with when you work it out for the year.

I have been a good girl and bulk bought some chocolate in my grocery shop which I will bring in to work instead. I have swapped my soft drink for water and I really hope together Michelle and I can inspire each other to carry on each week.

    This recipe is unfortunately not one for me (because goat’s cheese and worst French person ever!!) but I’m so excited about this challenge! It’ll be great fun (and hopefully make me eat something else than butternut soup or Itsu sushi for once!). Brill’ idea you two!
