Aloo Gobi

  Perfect for warmth on a cold evening, here is my recipe for Aloo Gobi, a delicious curry made from potatoes and cauliflowers.


  • 2 large potatoes cubed and par-boiled.
  • 1 Par-boiled Cauliflower cut into chunks
  • 1 large tomato, chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon ginger
  • 1 green chilli, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon salt
  • 1 teaspoon crushed black pepper
  • 1/2 teaspoon turmeric
  • 1 tablespoon butter
  • Handful of chopped coriander to garnish
  • 2 tablespoons vegetable oil


  1. In a wok or Karahi, heat the oil on medium heat.
  2. Add the cumin seeds and when they start to sizzle, add the potatoes and cauliflower.
  3. Mix well, and add the green chillies, salt, ginger and garlic.
  4. Add the chopped tomatoes and let this cook for around 10 minutes.
  5. Now add the cumin powder, coriander powder, red chilli powder, turmeric and black pepper.
  6. Add 1 1/2 cup of water and cover the pan and let this cook for 20 minutes until the gravy is thicker.
  7. Add the butter and mix well and add the garam masala and more salt if needed.
  8. Now garnish with coriander.
  9. Enjoy while hot with rotis or rice.
