Rajkumari toast – Spicy, eggy bread

In honour of the royal princess born this morning I have named my breakfast dish Rajkumari toast because…well it is fit for a royal 💓

  
So easy to make all you need is the following:

  • Some nice music on 
  • Some lovely white bread slices
  • An onion
  • One green chilly (optional)
  • 3 eggs (or more if you are making it for more than 2 people)
  • 2 crushed garlic cloves
  • Salt
  • Pepper
  • A handful of coriander
  • 3 or 4 fresh curry leaves
  • Cumin powder
  • Coriander powder
  • Garam masala
  • 1 tablespoon milk
  • Oil or coconut oil 

Break the eggs into a big bowl and add in all the ingredients except for the bread and oil.  

Heat up a frying pan with the oil/coconut oil

Dip each slice of bread into the eggy mixture and place on pan and turn every 2 minutes until nice and golden. As you are frying each side add a bit of the mixture on top.

  

Once ready eat straight away and enjoy with a nice cuppa 😊
